Recipe of the Week: Zucchini Orzo Pasta

“Zucchini Orzo”


3 oz. Orzo pasta
1 tsp. olive oil
1/3 c sweet onion, chopped
1/2 c zucchini, sliced
1/2 c squash, sliced
1/4 tsp. dried parsley
2 T lemon juice
2 T sliced olives
1/4 c low-fat Feta cheese


Prepare Orzo according to package. Drain and set aside.
Heat olive oil in skillet over medium heat and cook onion until translucent, about 5 mins.
Add in zucchini and squash with a little water and simmer until squash are tender, about 10-12 mins.
Stir in the orzo; season with parsley, lemon juice, olives and feta.
Makes 1 serving.
